Sweet Success at the Sweet Tooth Masterclass!

The first Sweet Tooth Masterclass kicked off last night with Executive Pastry Chef Greg Burge leading the group through a practical and mouthwatering array of dessert temptations. Starting off with a little informal introduction into what they'd be preparing, then straight into the kitchen rolling, dipping, spooning and most importantly.. tasting!

What was on the menu? Mmm, let us tell you.

Mango, passsionfruit and coconut meringue tart
Champagne, vanilla and strawberries
Peppermint tea truffles

All took home their Steel recipe kit along with a Steel Sweet Treats Bag.

Grilled Cutlet of Kurobuta Pork, Roasted Pear and Potato Puree, Broccolini, Crackling Powder

Kurobuta Pork is the most highly prized pork in Japan. Kurobuta has become the description of a specific type of Berkshire raised using Japanese style nutrition and animal management practices. In Australia a select number of farmers have bred pure Black Berkshire following this Japanese style. It has a combination of a sweet, rich flavour and delicate texture.

A lightly grilled cutlet finished in the oven. Golden roasted pears blended and folded through creamy potato puree and accompanied with blanched broccolini tops. Finished with crackling powder made from crushed roasted pork skin, bread crumbs and sea salt, giving added texture and an enhanced classis roast pork flavour.

Earth Hour - The Lights Go Off at Steel Bar & Grill

Last Saturday 26th March 2011, Earth Hour swept around the globe as people switched off their lights for one hour from 20:30. Steel Bar and Grill were committed to go beyond the hour in helping towards ongoing action for the planet and we remained throughout the night on candles.

With a record-breaking 134 countries participating, the global community showed it is united in commitment to a sustainable future. We lit the dining room with a handful of candles and diners embraced the lights off intimate dining atmosphere. We have even decided to make candlelit dining a regular Saturday feature. Congratulations to all who embraced this effort in helping towards this cause. We think that every little helps and are delighted to particpate to make a difference where we can.

Head Chef - Nick Raitt joins Steel Bar and Grill

Bringing his own flair of Modern Australian cooking with influence from Italian styles but centred on French cookery, Nick’s approach of looking for the prominence of each flavour and balancing components of each dish is evident on the Steel Bar and Grill menu.

Starting his culinary career at Wellingtons Plaza International Hotel, Nick saw the opportunities in Sydney too good to pass up and made the move in late 2000 taking up a position at acclaimed Forty One Restaurant for the next two years.

After further honing his skills at renowned Sydney restaurants Otto & Coast, he spent 18 months at the uber glam London hot spot and member’s club - The Cuckoo Club. In London, prior to returning to Sydney, Nick was appointed Personal Chef to the Sultan of Oman & Entourage cooking for guests who included Prime Minister Gordon Brown, Prince Charles & Queen Elizabeth.

On returning to Sydney and a position at the renowned Watermark Restaurant Balmoral Beach, Nick took up the position of Head Chef at of the popular Public Dining Room where in a short time helped to establish its mark on Sydney’s fine dining scene achieving 14/20 in the SMH Good Food Guide along with several other good reviews in the first year of trading.

Under the guide of Acclaimed Executive Chef Damian Heads for the Steel and Pony Restaurants Group, Nick Raitt joined Steel Bar and Grill as Head Chef in February 2011.
